Rinse the whole Dover sole under cold water and pat dry with paper towels. Rub the fish with olive oil, salt, and black pepper on both sides.

Place the fish on a baking sheet lined with parchment paper. Roast in the preheated oven for about 20-25 minutes, or until the flesh is flaky and cooked through.

Gradually add the milk while whisking continuously to avoid lumps. Cook until the mixture thickens, about 5 minutes.
