Prepare the Leeks
Clean the leeks thoroughly under running water to remove any dirt. Chop them into thin slices.

Prepare the Potatoes
Peel the potatoes and cut them into 1-inch cubes.

Prepare the Pancetta
Dice the pancetta into small pieces.

Prepare the Clams
Rinse the purple clams under cold water to remove any sand. Set aside.
Cooking the Chowder Sauce

Add Cream and Stock
Pour in the heavy cream and fish stock, stirring to combine. Bring the mixture to a simmer.

Season the Sauce
Add thyme, salt, and black pepper. Let the chowder sauce simmer for about 10 minutes, stirring occasionally.

Cook the Pancetta
In a separate pan, cook the diced pancetta over medium heat until crispy. Remove and drain on paper towels.

Roast the Cod
Preheat the oven to 375°F (190°C). Place the Norwegian cod fillets on a baking sheet, season with salt and pepper, and roast in the oven for 15-20 minutes or until cooked through.

Cook the Clams
In the last 5 minutes of cooking the cod, add the purple clams to the chowder sauce and cover until they open.
Assembly and Serving

Plate the Dish
On each plate, place a portion of sautéed leeks and potatoes, top with a roasted cod fillet, and spoon the chowder sauce with opened clams around the fish.

Sprinkle the crispy pancetta on top and serve immediately.
