Preparation

    Prepare the Vegetables

    Wash and trim the asparagus. Halve the cherry tomatoes, and deseed and slice the red bell pepper. Mince the garlic cloves.

    Season the Salmon

    Pat the salmon fillets dry with a paper towel. Rub both sides with olive oil, and season generously with salt and black pepper.

Cooking

    Sear the Salmon

    Heat a non-stick skillet over medium-high heat. Once hot, place the salmon fillets skin-side down in the skillet. Cook for 4-5 minutes until the skin is crispy, then carefully flip and cook for another 3-4 minutes until the salmon is cooked through.

    Cook the Vegetables

    In the same skillet, add the minced garlic and sauté for 30 seconds. Then add the asparagus and red bell pepper. Sauté for about 3-4 minutes until they start to soften, then add the halved cherry tomatoes and cook for an additional 2 minutes.

Serving

    Plate the Dish

    Remove the salmon and vegetables from the skillet. Place the salmon on serving plates, spoon the sautéed vegetables beside it, and garnish with fresh parsley and lemon wedges.
