    Prepare the Ingredients

    Chop the bell peppers, onions, and mushrooms into small pieces. Wash the spinach thoroughly and pat dry. Grate the cheddar cheese if not pre-grated.

    Beat the Eggs

    In a mixing bowl, crack the three eggs. Add salt and black pepper. Whisk the eggs until fully combined and slightly frothy.

    Heat the Pan

    Place a non-stick skillet over medium heat and add a small amount of oil or butter to coat the bottom.

    Cook the Fillings

    Once the skillet is hot, add chopped bell peppers, onions, and mushrooms. Sauté for about 2-3 minutes until softened. Add spinach and cook until wilted. Remove from the skillet and set aside.

    Cook the Omelette

    Pour the beaten eggs into the skillet, tilting the pan to ensure even coverage. Let it cook undisturbed for about 2-3 minutes until the edges start to set.

    Add the Fillings

    Once the omelette is mostly set, sprinkle the sautéed vegetables and grated cheddar cheese over one half of the omelette.

    Fold the Omelette

    Using a spatula, gently fold the omelette in half over the fillings. Cook for another minute until the cheese melts and the eggs are fully cooked.

    Serve

    Slide the omelette onto a plate, cut in half if desired, and serve immediately.
