Seafood Preparation

    Oysters

    Rinse the oysters under cold running water, scrub the shells to remove any dirt or sand. Serve on a platter with lemon wedges and cocktail sauce.

    Shrimp

    Boil a pot of salted water. Add the shrimp and cook for about 2-3 minutes or until they turn pink. Drain and cool them in ice water. Serve with cocktail sauce.

    Clams

    Rinse the clams under cold water. In a large pot, steam the clams with a little water and white wine until they open, approximately 5-7 minutes. Discard any that do not open.

    Maine Lobster

    Bring a large pot of salted water to a boil. Add the lobster and cook for about 8-10 minutes. Remove and let cool slightly before cracking open for serving.

    Mussels

    Rinse the mussels under cold water and remove any beards. In a large pot, steam with white wine and garlic until they open, about 5-7 minutes. Discard any that do not open.

    Salmon Rillettes

    In a bowl, mix together cooked, flaked salmon, cream cheese, lemon juice, capers, and fresh herbs. Season with salt and pepper. Serve chilled.

    Crab Salad

    Combine fresh crab meat, diced celery, diced red onion, mayonnaise, lemon juice, and a pinch of Old Bay seasoning in a bowl. Mix gently and serve chilled.

    Tuna Tartare

    Dice fresh tuna and mix with diced avocado, soy sauce, sesame oil, and chopped green onions. Serve immediately on a chilled plate.
