Seafood Preparation

Shucking Oysters
Carefully shuck the oysters and place them on a serving platter with ice to keep them chilled.

Preparing Shrimp
Boil the shrimp for 2-3 minutes in salted water until they turn pink, then chill them in ice water and arrange them on the platter.

Cleaning Littleneck Clams
Rinse the clams under cold water to remove any sand. Place them on the platter with the other seafood.

Preparing Lobster
Boil the lobster in salted water for about 10-12 minutes. Once cooked and cooled, split it in half and place it on the platter.

Chilling Mussels
Steam the mussels until they open, then chill them in ice water. Arrange them on the platter to taste.
Salmon Rillettes Preparation

Mixing Ingredients
In a bowl, combine smoked salmon, cream cheese, capers, fresh dill, and lemon juice. Mix until well blended.

Serving Rillettes
Transfer the mixture to a small serving dish and refrigerate for at least 30 minutes before serving with crackers or bread.
Tuna Tartare Preparation

Dicing Tuna
Finely dice the Ahi tuna and place it in a bowl.

Add soy sauce, sesame oil, lime juice, diced avocado, and chopped scallions to the tuna. Stir gently to combine.

Serving Tuna Tartare
Serve the tuna tartare in small bowls or on a plate with crackers or tortilla chips.
