Preparing the Filet Mignon

Seasoning the Steaks
Remove the filet mignon steaks from the refrigerator and let them sit at room temperature for about 30 minutes. Season both sides generously with salt and black pepper.

Searing the Steaks
In a large skillet, heat the olive oil over medium-high heat. Once the oil is hot, add the steaks to the skillet. Sear for about 4-5 minutes on each side for medium-rare, or until they reach your desired doneness. Remove from heat and let rest for 5 minutes.

Sautéing Shallots
In the same skillet, lower the heat to medium and add the chopped shallots. Sauté for about 2-3 minutes, until they are softened and translucent.

Adding Beef Stock and Seasoning
Add the beef stock and fresh thyme to the wine reduction. Continue to simmer for another 5-10 minutes, until the sauce thickens. Season with salt and black pepper to taste.
