Preparing the Ingredients

Prepare the Spinach
In a large skillet over medium heat, sauté the fresh spinach until wilted, about 3-4 minutes. Remove from heat and set aside.

Toast the English Muffins
Slice the English muffins in half and toast until golden brown. Set aside.

Prepare the Tomato
Slice the tomato into thin rounds.
Making the Hollandaise Sauce

Melt the Butter
In a small saucepan, melt the butter over low heat. Once melted, remove from heat and let cool slightly.

Whisk Egg Yolks
In a heat-proof bowl, whisk together the egg yolks and lemon juice until the mixture is pale and slightly thickened.

Season the Sauce
Add salt and a pinch of cayenne pepper to taste. Remove from heat and keep warm.
Poaching the Eggs

Poach the Eggs
Crack each egg into a small bowl, then gently slide them into the simmering water. Poach for about 3-4 minutes for a runny yolk or longer for firmer yolks.

Drizzle with Hollandaise
Generously drizzle the warm hollandaise sauce over the top of each assembled muffin.
