    Preheat your oven to 425°F (220°C).

    Wash and Cut Potatoes

    Wash the red potatoes thoroughly under cold water. Cut each potato into quarters or eighths, depending on their size, ensuring they are all roughly the same size for even cooking.

    Mince Garlic and Chop Rosemary

    Peel and mince the garlic cloves. Finely chop the fresh rosemary leaves, removing any tough stems.

Cooking

    Season the Potatoes

    In a large mixing bowl, combine the cut potatoes, minced garlic, chopped rosemary, olive oil, salt, and black pepper. Toss until the potatoes are evenly coated with the oil and seasonings.

    Roast the Potatoes

    Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Ensure they are not overcrowded to allow them to crisp up.
