Prepare the Chicken

Preheat the Oven
Preheat your oven to 425°F (220°C).

Roast the Chicken
Place the seasoned chicken halves in a roasting pan, skin side up. Roast in the preheated oven for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).
Roasted Potatoes

Prepare the Potatoes
In a large bowl, toss the halved baby potatoes with olive oil, salt, rosemary, and minced garlic until well coated.

Roast the Potatoes
Spread the potatoes in a single layer on a baking sheet. Place them in the oven with the chicken for 25-30 minutes, or until golden brown and tender.
Sauté the Spinach

Sauté the Garlic
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.

Cook the Spinach
Add the fresh spinach to the skillet and sauté until wilted, about 3-5 minutes. Season with salt and black pepper to taste.
Make the Chicken Jus

Prepare the Jus
In a small saucepan, combine chicken stock and butter over medium heat. Bring to a simmer and allow to reduce slightly, about 5-10 minutes. Season with salt and black pepper to taste.
