Preparing Brussels Sprouts

Clean and Trim Brussels Sprouts
Start by rinsing the Brussels sprouts under cold water. Trim the stem ends and remove any yellow or damaged leaves.

Cut Brussels Sprouts
Cut each Brussels sprout in half lengthwise to ensure even cooking.

Season Brussels Sprouts
In a large bowl, toss the halved Brussels sprouts with olive oil, salt, and black pepper until evenly coated.
Making the Cider & Bacon Glaze

Cook the Bacon
In a medium skillet over medium heat, cook the bacon until crispy. Remove the bacon from the pan and place on a paper towel to drain. Reserve 1 tablespoon of the bacon grease in the pan.

Prepare the Glaze
In the same skillet with the reserved bacon grease, add minced garlic and sauté for 1 minute until fragrant. Pour in the apple cider, honey, and apple cider vinegar. Bring to a simmer.

Thicken the Glaze
Allow the glaze to simmer for about 10-15 minutes, stirring occasionally, until it thickens slightly. Add the thyme and crumble the cooked bacon into the glaze, stirring to combine.
Cooking Brussels Sprouts

Roast the Brussels Sprouts
Preheat your oven to 400°F (200°C). Spread the seasoned Brussels sprouts on a baking sheet in a single layer. Roast in the oven for about 20-25 minutes, or until they are golden brown and tender.

Combine with Glaze
Once the Brussels sprouts are done roasting, transfer them to a large bowl. Pour the cider and bacon glaze over the sprouts and toss to coat evenly.
