Method

Preparation Steps

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (390°F).

  2. 2

    Prepare the Ramekins

Grease four ramekins with butter and dust with a little flour. Set aside.

  3. 3

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Place the bowl over a pot of simmering water (double boiler) and melt until smooth, stirring occasionally. Remove from heat and let cool slightly.

  4. 4

    Mix Sugar and Eggs

In a separate bowl, whisk the granulated sugar and large eggs until the mixture is light and frothy.

  5. 5

    Combine Mixtures

Gently fold the melted chocolate mixture into the egg and sugar mixture. Be careful not to deflate the mixture.

  6. 6

    Add Flour and Vanilla

Sift the all-purpose flour and add it to the chocolate mixture along with the vanilla extract and a pinch of salt. Fold together until just combined.

  7. 7

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  8. 8

    Bake

Place the ramekins on a baking tray and bake in the preheated oven for about 12-14 minutes, until the edges are set but the center is still soft.

  9. 9

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen and invert onto individual plates. Serve immediately, preferably with a scoop of vanilla ice cream.
