    Prepare the Chicken Livers

    Rinse the chicken livers under cold water and pat them dry with paper towels. Trim any excess fat and connective tissue.

    Chop the Onion and Mince the Garlic

    Finely chop the onion and mince the garlic cloves. Set aside.

Cooking

    Sauté the Onions and Garlic

    In a large skillet, melt 50 grams of unsalted butter over medium heat. Add the chopped onions and sauté until they are translucent, about 5 minutes. Then, add the minced garlic and cook for an additional 1-2 minutes until fragrant.

    Cook the Chicken Livers

    Increase the heat to medium-high and add the chicken livers to the skillet. Season with salt and black pepper. Cook for about 5-7 minutes, turning occasionally, until the livers are browned on the outside but still slightly pink in the center.

    Add the fresh thyme leaves and the remaining 50 grams of butter to the skillet. Stir well to combine. Cook for another 2-3 minutes until the butter is melted and the livers are cooked through.

    Remove the skillet from heat and let the mixture cool slightly. Transfer the mixture to a food processor and add the lemon juice. Blend until smooth and creamy.

    Transfer the chicken liver schmaer to a serving dish. If desired, garnish with chopped fresh parsley and capers. Serve with crackers, crusty bread, or vegetable sticks.
