Oysters

Prepare the Oysters
Preheat the broiler in your oven. Carefully shuck the oysters, placing them on a baking tray. Drizzle the melted butter over the oysters, then sprinkle with minced garlic and lemon juice. Set aside.

Broil the Oysters
Place the tray of oysters under the broiler for about 5-7 minutes, or until the edges of the oysters begin to curl and they are slightly golden. Remove from oven and set aside.
Butter Braised Endive

Sauté the Endive
In a skillet, melt the unsalted butter over medium heat. Add the halved endives cut side down and season with salt and black pepper. Cook for about 5-7 minutes until the endives are tender and caramelized, turning occasionally. Remove from heat and keep warm.
Apple

Prepare the Apple
In a small bowl, toss the thinly sliced apple with lemon juice to prevent browning. Set aside.
Champagne Sabayon

Make the Sabayon
In a heatproof bowl, whisk together egg yolks and sugar. Place the bowl over a pot of simmering water (double boiler). Gradually whisk in the champagne and continue whisking until the mixture thickens and becomes creamy, about 5-7 minutes. Remove from heat and let cool slightly.
