Braised Short Ribs

    Prepare the Short Ribs

    Preheat your oven to 325°F (163°C). Pat the short ribs dry with paper towels and season them generously with salt and black pepper.

    Sear the Ribs

    In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Add the short ribs in batches and sear them on all sides until they are browned, about 3-4 minutes per side. Remove the short ribs and set them aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables are softened. Add the minced garlic and sauté for an additional minute until fragrant.

    Deglaze the Pot

    Pour in the red wine, scraping the bottom of the pot to release any browned bits. Bring to a boil and let it simmer for about 5 minutes until the wine reduces slightly.

    Add Broth and Herbs

    Add the beef broth, thyme, and bay leaves to the pot. Return the seared short ribs to the pot, ensuring they are submerged in the liquid.

    Braise the Ribs

    Cover the pot and transfer it to the preheated oven. Braise for 2.5 to 3 hours, or until the short ribs are fork-tender.

    Rest the Ribs

    Once cooked, remove the pot from the oven and let the short ribs rest in the liquid for about 15 minutes before serving.

Mashed Potatoes

    Cook the Potatoes

    While the short ribs are braising, place the peeled and cubed russet potatoes in a large pot and cover with cold water. Add a pinch of salt and bring to a boil over medium-high heat.

    Mash the Potatoes

    Once boiling, reduce to a simmer and cook until the potatoes are fork-tender, about 15-20 minutes. Drain the potatoes and return them to the pot.

    Add Butter and Milk

    Add the butter, milk, salt, and black pepper to the drained potatoes. Mash until smooth and creamy. Adjust seasoning to taste.
