Method

Braised Rabbit

    Sear the Rabbit

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Season the rabbit with salt and black pepper. Sear the rabbit on all sides until golden brown, about 8-10 minutes. Remove and set aside.

    Sauté Vegetables

    In the same pot, add garlic, onion, carrots, and celery. Sauté until the vegetables are soft, about 5 minutes.

    Add Liquids and Herbs

    Pour in the white wine and chicken stock. Add thyme and bay leaves. Stir well.

    Braise the Rabbit

    Return the rabbit to the pot, cover, and reduce heat to low. Simmer for about 1.5 to 2 hours, or until the rabbit is tender.

Spätzle

    Mix Ingredients

    In a large bowl, combine flour, eggs, milk, and salt. Mix until a smooth batter forms.

    Cook Spätzle

    Bring a large pot of salted water to a boil. Using a Spätzle maker or a colander, press the batter into the boiling water. Cook until they float to the surface, about 2-3 minutes. Remove and drain.

Roasted Mushrooms

    Prepare Mushrooms

    Preheat the oven to 200°C (400°F). In a bowl, combine sliced mushrooms with olive oil, minced garlic, salt, and black pepper. Toss to coat.

    Roast Mushrooms

    Spread the mushrooms on a baking sheet and roast in the preheated oven for 20-25 minutes, until golden and tender.

Peas

    Cook Peas

    In a small saucepan, melt butter over medium heat. Add the peas, season with salt, and cook for 5-7 minutes until heated through.

Gruyere Cheese Sauce

    Make Roux

    In a saucepan, melt butter over medium heat. Add flour and whisk for 1-2 minutes until bubbly.

    Add Milk

    Gradually whisk in the milk, stirring constantly until thickened, about 3-5 minutes.

    Add Cheese

    Remove from heat and stir in the Gruyere cheese until melted. Season with salt and black pepper.
