Oxtail Filling

1. Prepare the Oxtail

Season the oxtail pieces with salt and black pepper. Heat olive oil in a large pot over medium-high heat. Add the oxtail and sear until browned on all sides, about 8-10 minutes. Remove from the pot and set aside.

2. Sauté Vegetables

In the same pot, add chopped onion, carrot, and celery. Sauté for about 5 minutes until the vegetables are softened. Add the minced garlic and cook for another minute.

3. Deglaze and Braise

Pour in the red wine and scrape the bottom of the pot to deglaze. Return the oxtail to the pot. Add thyme, bay leaf, beef broth, and soy sauce. Bring to a boil, then reduce heat to low and cover. Simmer for 3 hours or until the oxtail is tender and falls off the bone.

4. Shred the Meat

Once cooked, remove the oxtail from the pot and let it cool slightly. Remove the meat from the bones and shred it. Discard the bones and bay leaf. Return the shredded meat to the pot and mix with the sauce.

5. Make the Dough

In a large bowl, combine flour and salt. In a separate bowl, whisk together the egg and water. Gradually add the wet ingredients to the flour mixture, stirring until a dough forms.

6. Knead the Dough

Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

7. Roll Out the Dough

After resting, roll out the dough as thinly as possible, ideally about 1/8 inch thick. Brush with melted butter.

8. Fill the Strudel

Spread the oxtail filling evenly over the rolled-out pastry, leaving a border around the edges. Roll the pastry tightly, starting from one end, to form a log shape.

9. Prepare for Baking

Place the rolled strudel seam-side down on a baking sheet lined with parchment paper. Brush the top with beaten egg and sprinkle with sesame seeds.

10. Bake the Strudel

Preheat the oven to 375°F (190°C). Bake the strudel for 30-35 minutes, or until golden brown and crisp.

11. Serve

Remove from the oven and let cool slightly before slicing. Serve warm.
