Prepare the Steak

    Season the Steak

    Take the ribeye steaks out of the refrigerator and let them come to room temperature for about 30 minutes. Rub each steak with olive oil, then season generously with salt and black pepper on both sides.

    Prepare Garlic and Rosemary

    Mince the garlic cloves and chop the fresh rosemary. Set aside for later use.

    Cook the Steak

    Preheat a grill or a cast iron skillet over medium-high heat. Once hot, place the steaks on the grill/skillet and cook for about 4-5 minutes per side for medium-rare, adding the minced garlic and chopped rosemary on top during the last minute of cooking. Remove from heat and let rest for 5 minutes before slicing.

Make the Frites

    Cut the Potatoes

    Peel the russet potatoes and cut them into thin strips (about 1/4 inch thick) to create frites.

    Rinse and Dry

    Rinse the cut potatoes in cold water to remove excess starch, then pat them dry with paper towels to ensure they are as dry as possible.

    Heat the Oil

    In a large heavy-bottomed pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Potatoes

    Carefully add the dried potato strips to the hot oil in batches, ensuring not to overcrowd the pot. Fry for about 4-5 minutes until they are golden brown and crispy. Remove them with a slotted spoon and transfer to a paper towel-lined plate to drain excess oil.

    Season the Frites

    While the frites are still hot, sprinkle them with sea salt to taste.

    Slice the rested ribeye steaks and arrange them on plates alongside the crispy frites. Optionally, sprinkle fresh parsley over the top for garnish.
