Preparation of House-Smoked Meats

    Prepare the Marinade

    In a large bowl, mix together paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and liquid smoke.

    Marinate the Pork

    Rub the mixture all over the pork shoulder. Cover and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

    Smoke the Pork

    Preheat your smoker to 225°F (107°C). Place the marinated pork shoulder in the smoker and smoke for about 8 hours, or until the internal temperature reaches 195°F (90°C).

    Rest and Serve

    Once done, remove the pork from the smoker and let it rest for at least 30 minutes before shredding. Serve as desired.
