Prepare the Pistachio Cake
Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and set aside.

Blend Ingredients
In a food processor, combine the shelled pistachios until finely ground. Add the flour, sugar, baking powder, and salt, and pulse to combine.

Combine Mixtures
Fold the dry ingredients into the wet mixture until just combined. Do not overmix.

Bake the Cake
Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

Prepare the Mousse
While the cake is baking, melt the white chocolate in a double boiler or microwave. Let it cool slightly, then fold it gently into whipped labneh.

Once the cake is cooled slightly, slice it and serve warm with a generous dollop of the white chocolate mousse on top. Garnish with sliced nectarines and fig leaves.
