Falafel Preparation

    Soak Chickpeas

    Soak the dried chickpeas in water overnight or for at least 8 hours. They should double in size.

    Make Falafel Mixture

    After soaking, drain the chickpeas and place them in a food processor. Add the onion, garlic, parsley, cumin, coriander, baking powder, salt, and black pepper. Pulse until the mixture is coarsely blended but not pureed.

    Add Flour

    Transfer the mixture to a bowl and add the flour. Mix until well combined. The mixture should hold together; if too wet, add a little more flour.

    Shape Falafel

    With wet hands, shape the mixture into small balls or patties, about 1.5 inches in diameter.

    Heat Oil

    In a deep skillet or frying pan, heat the vegetable oil over medium heat until hot.

    Fry Falafel

    Fry the falafel balls in batches for about 4-5 minutes or until golden brown and crispy. Remove and drain on paper towels.

    Make Tahini Sauce

    In a small bowl, combine the tahini, water, lemon juice, minced garlic, and salt. Whisk until smooth. If the sauce is too thick, add a little more water to reach your desired consistency.
