    Mix the Ingredients

    In a large mixing bowl, combine the all-purpose flour and salt. Mix well to ensure the salt is evenly distributed.

    Add Starter and Water

    Create a well in the center of the flour mixture. Pour in the active sourdough starter and water. Gently mix with your hands or a wooden spoon until a shaggy dough forms.

    Knead the Dough

    Turn the dough out onto a lightly floured surface. Knead the dough for about 10 minutes, or until it becomes smooth and elastic. You can also use the stretch and fold method during this process.

    First Rise

    Place the kneaded dough into a lightly greased bowl. Cover with a damp cloth or plastic wrap and let rise at room temperature for 4 to 8 hours, or until doubled in size.

    Shape the Dough

    Once the dough has risen, turn it out onto a lightly floured surface. Gently deflate the dough and shape it into a round or oval loaf. Place it seam-side down in a floured proofing basket.

    Second Rise

    Cover the shaped dough with a cloth and let it rise for another 1 to 2 hours, until it has puffed up.

    Preheat the Oven

    About 30 minutes before baking, preheat your oven to 450°F (232°C). If using a Dutch oven, place it inside the oven to heat up.

    Bake the Sourdough

    Gently flip the proofed dough onto a piece of parchment paper. Score the top with a sharp knife. Carefully transfer the dough to the hot Dutch oven (if using) or directly onto a baking sheet. Bake for 30-40 minutes, until the crust is deep golden brown.

    Cool the Bread

    Remove the bread from the oven and let it cool on a wire rack for at least an hour before slicing. This allows the crumb to set properly.
