    Prepping the Ribs

    Begin by removing the membrane from the back of the pork ribs for better flavor absorption.

    Applying the Rub

    In a bowl, mix olive oil, paprika, brown sugar, garlic powder, onion powder, salt, black pepper, and cayenne pepper to create a rub. Rub this mixture generously over both sides of the ribs. Allow the ribs to marinate for at least 1 hour, preferably overnight in the refrigerator.

    Preparing the Smoker

    Soak the wood chips in water for at least 30 minutes before smoking. Prepare your smoker according to the manufacturer's instructions and preheat it to a temperature of 225°F (107°C).

    Smoking the Ribs

    Once the smoker is preheated, add the soaked wood chips. Place the marinated ribs in the smoker, bone side down, and smoke for approximately 3 to 4 hours. Maintain a consistent temperature and add more wood chips as needed.

    Finishing with Apple Cider Vinegar

    After the first 2 hours, start spraying or brushing the ribs with apple cider vinegar every 30 minutes to keep them moist and enhance flavor.

    Checking for Doneness

    The ribs are done when they have pulled back from the bones, and a toothpick inserted into the meat goes in with little resistance. This usually takes about 3 to 4 hours.

    Resting and Serving

    Once done, remove the ribs from the smoker and let them rest for 10-15 minutes before slicing. Serve with your favorite barbecue sauce or enjoy them as is.
