Begin by washing the green cabbage, red cabbage, and carrots thoroughly under cold water.

Shred the Cabbage
Using a sharp knife or a mandoline slicer, shred the green cabbage and red cabbage into thin strips. You should have about 4 cups of green cabbage and 2 cups of red cabbage.

Grate the Carrots
Peel the carrots and then grate them using a box grater or a food processor until you have about 2 cups.

Trim the ends of the green onions and chop them into thin slices until you have about 1 cup.
