    Prepare the Potatoes

    Preheat the oven to 400°F (200°C). Scrub the potatoes clean and prick them with a fork several times.

    Bake the Potatoes

    Place the potatoes directly on the oven rack and bake for 45-60 minutes, or until they are tender. Remove from the oven and let cool slightly.

    Scoop Out the Flesh

    Once cool enough to handle, cut the potatoes in half lengthwise. Scoop out a small portion of the potato flesh, leaving about 1/4 inch of potato on the skin.

    Season the Skins

    Brush the insides of the potato skins with olive oil and sprinkle with salt and black pepper.

    Bake the Skins Again

    Place the potato skins on a baking sheet, skin-side down. Bake in the oven for another 10-15 minutes until they are crisp.

    Add Cheese and Green Onions

    Remove the skins from the oven and sprinkle shredded cheddar cheese and chopped green onions inside each skin.

    Final Bake

    Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

    Remove from the oven and let cool slightly. Serve hot with sour cream on the side.
