    Prepare the Beans

    Soak the pinto beans in water overnight or for at least 6 hours. Drain and rinse before cooking.

    Cook the Pork

    In a large pot, heat olive oil over medium heat. Add the diced pork shoulder and cook until browned, about 5-7 minutes.

    Add Vegetables

    Add the chopped onion, minced garlic, and green bell pepper to the pot. Sauté until the vegetables are tender, about 5 minutes.

    Combine Ingredients

    Stir in the soaked pinto beans, diced tomatoes, minced chipotle peppers, cumin, chili powder, salt, and black pepper. Mix well.

    Simmer

    Pour in the water or broth, bring to a boil, then reduce heat to low. Cover and let simmer for about 1.5 to 2 hours, or until the beans are tender and the flavors meld together.
