Fry the Tortillas
In a large skillet, heat the vegetable oil over medium heat. Once hot, carefully add corn tortillas, a few at a time, and fry until golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels, then sprinkle with salt.

Assemble the Nachos
Preheat the oven to 350°F (175°C). On a baking sheet, layer the fried tortillas. Sprinkle the Cheddar and Monterey Jack cheese evenly over the top.

Add Toppings
Add jalapeños on top of the cheese layer. Place the baking sheet in the oven and bake for about 10 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and let cool for a minute. Serve hot with sour cream and pico de gallo on the side.
