Cooking Process

    Prepare the Ribs

    Remove the membrane from the back of the ribs and trim excess fat. Season both sides of the ribs with salt, black pepper, garlic powder, onion powder, and smoked paprika.

    Prepare the Smoker

    Soak the pecan wood chips in water for about 30 minutes. Preheat your smoker to 225°F (107°C).

    Smoke the Ribs

    Once the smoker is ready, add the soaked pecan wood chips. Place the ribs in the smoker and smoke for about 5 hours, or until the meat is tender and pulls away from the bone.

    Grill the Ribs

    Preheat the grill to medium heat. Once the ribs are smoked, transfer them to the grill. Grill for about 10-15 minutes, basting with BBQ sauce, until caramelized and heated through.

    Serve

    Remove the ribs from the grill, let them rest for a few minutes, then slice and serve with additional BBQ sauce on the side.
