    Prepare the Pork

    In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the cubed pork shoulder and brown on all sides. Remove the pork and set aside.

    Sauté the Aromatics

    In the same pot, add the diced onion and sauté for about 5 minutes until translucent. Add the minced garlic and red pepper flakes, cooking for another minute until fragrant.

    Cook the Collard Greens

    Return the browned pork to the pot. Add the chopped collard greens and stir to combine.

    Simmer

    Pour in the chicken broth, and season with salt and black pepper to taste. Bring to a boil, then reduce the heat to low. Cover and let simmer for about 45 minutes, or until the collard greens are tender and the pork is cooked through.

    Serve

    Taste and adjust seasoning if necessary. Serve hot as a side dish or main course.
