Trim excess fat from the pork shoulder, then season generously with salt, black pepper, and BBQ rub. Let it sit at room temperature for about 30 minutes.

Soak the Wood Chips
Soak the pecan wood chips in water for at least 30 minutes before smoking.

Preheat the Smoker
Prepare your smoker for low and slow cooking at a temperature of 225°F (107°C).

Maintain Temperature
Monitor the smoker's temperature and maintain it at 225°F (107°C) for approximately 14 hours, adding more wood chips as needed.

Check for Tenderness
After 14 hours, check the pork for tenderness. It should be easy to pull apart with a fork. If not tender, continue smoking until it reaches the desired texture.

Rest the Meat
Once tender, remove the pork from the smoker and let it rest for at least 30 minutes before shredding.

Shred the pork and toss it with apple cider vinegar and BBQ sauce. Serve warm with additional BBQ sauce on the side.
