Method

Prepare Strawberries

    Slice and Sweeten

    Wash the fresh strawberries under cold water. Remove the stems and slice them into halves or quarters, depending on your preference. In a bowl, combine the sliced strawberries with 2 tablespoons of granulated sugar. Toss gently to coat the strawberries in sugar, then set aside to macerate for at least 30 minutes.

Make Shortcake

    Mix Dry Ingredients

    In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of granulated sugar, 1 tablespoon of baking powder, and 1 teaspoon of salt. Whisk together until well combined.

    Cut in Butter

    Cut 1 stick of unsalted butter into small cubes and add it to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until the mixture resembles coarse crumbs.

    Add Wet Ingredients

    In a separate bowl, whisk together 1 cup of heavy cream and 1 teaspoon of vanilla extract. Pour this mixture into the dry ingredients and stir gently until just combined. Do not overmix.

    Bake Shortcakes

    Preheat the oven to 425°F (220°C). Turn the dough out onto a floured surface and gently pat it into a 1-inch thick rectangle. Cut out rounds using a biscuit cutter or a glass. Place the shortcakes on a baking sheet lined with parchment paper and bake for 12-15 minutes until golden brown.

Make Whipped Cream

    Beat Heavy Cream

    In a mixing bowl, add 1 cup of heavy cream, 2 tablespoons of powdered sugar, and 1 teaspoon of vanilla extract. Using an electric mixer, beat the mixture on medium-high speed until soft peaks form. Be careful not to overwhip.

Assemble Dessert

    Layer Ingredients

    Once the shortcakes have cooled slightly, slice them in half horizontally. On the bottom half, spoon a generous amount of the macerated strawberries along with some of the juices. Top the strawberries with a dollop of whipped cream, then place the top half of the shortcake on top.

    Serve

    Serve immediately, optionally garnishing with extra strawberries and whipped cream on top.
