Preparation

Chocolate Mousse

1. Prepare Gelatin

In a small bowl, sprinkle gelatin powder over water and let it sit for about 5 minutes to bloom.

2. Melt Chocolate

In a heatproof bowl, melt dark chocolate over a double boiler or microwave until smooth. Remove from heat and let cool slightly.

3. Whip Cream

In a separate bowl, whip heavy cream with sugar and vanilla extract until soft peaks form.

4. Combine Mixtures

Gently fold the whipped cream into the melted chocolate until fully combined. Stir in the bloomed gelatin.

5. Chill

Transfer the mousse into serving molds and refrigerate for at least 2 hours or until set.

Cherry Jam

6. Cook Cherries

In a saucepan, combine chopped cherries, sugar, and lemon juice. Cook over medium heat until the mixture thickens, about 15-20 minutes. Stir occasionally.

7. Cool Jam

Remove from heat and let the cherry jam cool before transferring to a jar.

Devil's Food Cake

8. Preheat Oven

Preheat your oven to 175°C (350°F). Grease and flour two 8-inch round cake pans.

9. Mix Dry Ingredients

In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.

10. Mix Wet Ingredients

In another bowl, whisk eggs, buttermilk, vegetable oil, and vanilla extract until smooth.

11. Combine Mixtures

Pour the wet ingredients into the dry ingredients and mix until just combined.

12. Bake

Divide the batter evenly between the prepared cake pans and bake for 25-30 minutes, or until a toothpick comes out clean.

13. Cool Cakes

Allow the cakes to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.

Pecan Brittle Garnish

14. Prepare Sugar Mixture

In a saucepan, combine sugar and water. Cook over medium heat until the sugar dissolves and turns a light amber color.

15. Add Pecans

Stir in the chopped pecans and cook for an additional 2 minutes.

16. Cool Brittle

Pour the mixture onto a parchment-lined baking sheet and spread it out. Allow to cool completely before breaking into pieces.

Cherry Sauce

17. Cook Sauce

In a saucepan, combine pitted cherries, sugar, and water. Bring to a simmer and cook for about 10 minutes, or until the cherries are soft.

18. Blend Sauce

Use an immersion blender to puree the sauce until smooth. Strain if desired.

White Chocolate Drizzle

19. Melt Chocolate

In a microwave or double boiler, melt white chocolate with heavy cream until smooth and combined.

20. Drizzle

Transfer the melted white chocolate to a piping bag and drizzle over the chocolate mousse dome before serving.
