Cook the Chicken
In a large pot, add the whole Amish chicken and cover it with 4 cups of chicken broth. Bring to a boil, then reduce heat and simmer for about 30-40 minutes or until the chicken is fully cooked.

Sauté the Vegetables
In a separate skillet, heat a tablespoon of olive oil over medium heat. Add the chopped mushrooms, sliced leek, and minced garlic. Sauté until the vegetables are soft and fragrant, about 5-7 minutes.

Combine Ingredients
Once the chicken is cooked, remove it from the pot and let it cool. Shred the chicken into bite-sized pieces. Add the sautéed vegetables to the chicken broth.

Add Chicken and Cream
Return the shredded chicken to the pot. Stir in 1 cup of heavy cream, salt, black pepper, and thyme. Squeeze the juice of the lemon into the soup and stir well.

Simmer and Serve
Allow the soup to simmer for an additional 10-15 minutes to blend the flavors. Adjust seasonings to taste before serving hot.
