Steak and Sauce Preparation

    Prepare the Horseradish Cream Sauce

    In a mixing bowl, combine the sour cream and horseradish. Mix well until smooth. Set aside in the refrigerator to chill.

    Cook the Shaved Sirloin

    Heat a skillet over medium-high heat. Add the shaved sirloin and season with salt and black pepper to taste. Cook for about 3-5 minutes until browned and cooked through, stirring often. Remove from heat.

    Melt the Gruyere Cheese

    While the steak is still warm, place the shredded Gruyere cheese on top of the cooked sirloin and cover with a lid for 1-2 minutes, or until the cheese is melted.

Caramelized Onions Preparation

    Caramelize the Onions

    If using caramelized onions, slice the onions thinly. In a separate skillet, heat the olive oil over medium heat. Add the onions and salt, and cook slowly, stirring occasionally, for about 20-25 minutes until the onions are golden brown and caramelized.

Assembly

    Assemble the Sandwich

    Slice the sourdough rolls in half. Spread a generous amount of horseradish cream sauce on the bottom half of each roll. Layer on the steak with melted Gruyere, and add caramelized onions if desired. Top with the other half of the roll and press down gently.

    Serve the steak sandwiches warm with your choice of sides. Enjoy!
