Beef Preparation

    Preheat Oven

    Preheat your oven to 325°F (165°C).

    Season the Beef

    Rub the beef roast with olive oil, then season generously with salt, black pepper, garlic powder, and onion powder on all sides.

    Sear the Beef

    In a large skillet over medium-high heat, sear the roast on all sides until browned (about 3-4 minutes per side).

    Roast the Beef

    Transfer the seared roast to a roasting pan and place it in the preheated oven. Roast for about 1.5 to 2 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare.

    Rest the Beef

    Remove the roast from the oven and let it rest for at least 15 minutes before slicing.

Au Jus Preparation

    Prepare Au Jus

    In a saucepan, combine the beef broth, red wine (if using), Worcestershire sauce, thyme, salt, and black pepper. Bring to a simmer over medium heat.

    Reduce Au Jus

    Allow the mixture to simmer for about 15-20 minutes, reducing slightly, while the beef rests.

    Strain Au Jus

    Strain the au jus through a fine mesh sieve into a serving bowl or gravy boat.
