Prepare the Corned Beef
If using store-bought corned beef, heat it according to package instructions. If making from scratch, simmer the corned beef in a mixture of water, spices, and vinegar for about 3 hours until tender.

Prepare the Sauce
In a small bowl, mix the Russian dressing ingredients together. You can adjust the flavors to taste by adding more mayonnaise, ketchup, or horseradish as desired.

Assemble the Sandwich
On one slice of pumpernickel bread, layer a generous portion of the sliced corned beef. Top with 1/4 cup of sauerkraut, followed by 2 ounces of Gruyere cheese. Spread a tablespoon of Russian dressing on the other slice of pumpernickel bread.

Remove the sandwich from the skillet, let it cool for a minute, then slice in half. Serve with extra Russian dressing on the side for dipping.
