Preparation

    Preheat the Oven

    Preheat your oven to 375°F (190°C).

    Prepare Potatoes

    Peel and thinly slice the potatoes using a mandoline or sharp knife. Aim for slices about 1/8 inch thick.

    Slice Onion

    Finely slice the onion and set aside.

    Mince Garlic

    Peel and mince the garlic cloves.

Assembling the Gratin

    Combine Cream and Milk

    In a mixing bowl, combine the heavy cream and milk. Add minced garlic, thyme, salt, and black pepper. Mix well.

    Grease Baking Dish

    Butter a 9x13 inch baking dish with the 2 tablespoons of butter.

    Layer Potatoes and Onions

    Layer half of the sliced potatoes in the bottom of the prepared baking dish. Sprinkle half of the sliced onions over the potatoes.

    Add Cream Mixture

    Pour half of the cream mixture over the first layer of potatoes and onions.

    Repeat Layers

    Repeat with the remaining potatoes and onions, followed by the rest of the cream mixture.

    Top with Cheese

    Sprinkle the cheddar and Parmesan cheese evenly on top of the final layer.

Baking

    Cover and Bake

    Cover the baking dish with aluminum foil and bake in the preheated oven for 45 minutes.

    Uncover and Brown

    After 45 minutes, remove the foil and bake for an additional 15-20 minutes, or until the top is golden brown and bubbly.

    Cool and Serve
