Make the Dough
In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the mashed potatoes, flour, salt, melted butter, and the yeast mixture. Mix until a dough forms.
- 3
Knead the Dough
Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
- 4
Shape the Rolls
Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them on a greased baking sheet. Cover and let rise for another 30 minutes.
- 5
Bake the Rolls
Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes until golden brown. Remove from the oven and let cool slightly before serving.
