Method

Potato Bread Rolls

  1. 1

    Prepare the Potatoes

Peel and chop the russet potatoes into chunks. Boil them in salted water until fork-tender, approximately 15-20 minutes. Drain and mash until smooth.

  2. 2

    Make the Dough

In a small bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy. In a large mixing bowl, combine the mashed potatoes, flour, salt, melted butter, and the yeast mixture. Mix until a dough forms.

  3. 3

    Knead the Dough

Transfer the dough to a floured surface and knead for about 5-7 minutes until smooth and elastic. Place it in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

  4. 4

    Shape the Rolls

Once risen, punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them on a greased baking sheet. Cover and let rise for another 30 minutes.

  5. 5

    Bake the Rolls

Preheat the oven to 375°F (190°C). Bake the rolls for 15-20 minutes until golden brown. Remove from the oven and let cool slightly before serving.

Cheddar, Garlic and Bacon Compound Butter

  1. 6

    Mix the Ingredients

In a mixing bowl, combine softened butter, shredded cheddar cheese, cooked bacon, minced garlic, chopped parsley, and black pepper. Mix until well combined.

  2. 7

    Chill the Compound Butter

Transfer the mixture onto a piece of parchment paper and roll into a log shape. Twist the ends to seal, and refrigerate for at least 30 minutes or until firm.

Chive Crème Fraîche

  1. 8

    Combine Ingredients

In a bowl, mix the crème fraîche, chopped chives, lemon juice, and salt together until well blended.

  2. 9

    Chill Before Serving

Cover and refrigerate for at least 15 minutes before serving to allow the flavors to meld.
