Method

Preparing the Chicken

    Preheat Oven

    Preheat your oven to 425°F (220°C).

    Season the Chicken

    Rub the half chicken with olive oil, salt, black pepper, garlic powder, and dried rosemary.

    Roast the Chicken

    Place the chicken in a roasting pan and roast for 45-50 minutes, or until the internal temperature reaches 165°F (75°C).

Preparing the Vegetables

    Chop the Vegetables

    Peel and chop the carrots and potatoes into bite-sized pieces. Slice the zucchini into rounds.

    Season the Vegetables

    In a bowl, toss the chopped vegetables with olive oil, salt, and black pepper.

    Roast the Vegetables

    Spread the seasoned vegetables around the chicken in the roasting pan and roast for the last 30 minutes of the chicken's cooking time.

Making Mashed Potatoes

    Boil the Potatoes

    Peel and chop the potatoes into chunks. Boil in salted water until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Making the Maple Glaze

    Prepare the Glaze

    In a small saucepan, melt the butter over low heat. Stir in maple syrup, fresh rosemary, and salt until well combined.

    Glaze the Chicken

    During the last 10 minutes of roasting, brush the maple rosemary glaze over the chicken and vegetables.

Serving

    Plate the Dish

    Once cooked, let the chicken rest for 10 minutes before carving. Serve the glazed chicken with roasted vegetables and creamy mashed potatoes on the side.
