Mix the Meat
In a large bowl, combine the ground pork and ground beef. If using pork fat, add it to the mixture.

Add Spices
Sprinkle the salt, black pepper, garlic powder, onion powder, paprika, red pepper flakes, dried thyme, and dried sage over the meat mixture. Mix thoroughly using your hands or a spatula until the spices are evenly distributed.

Incorporate Ice Water
Gradually add the ice water to the meat mixture, mixing until the mixture is cohesive and slightly sticky. This helps bind the ingredients together.
Stuffing (if using casings)

Prepare the Casings
Rinse the sausage casings under cold water to remove excess salt. Soak them in warm water for about 30 minutes before use.

Stuff the Sausage
Using a sausage stuffer, fill the casings with the sausage mixture, being careful not to overfill. Twist the sausages at regular intervals to create links.
Cooking

Cook the Sausage
Preheat a skillet over medium heat. Add the sausage links and cook for about 10-15 minutes, turning occasionally, until they are browned and cooked through (internal temperature should reach 160°F or 70°C).
