Preparation of Vegetables

    Wash and Chop

    Thoroughly wash the romaine lettuce, cherry tomatoes, cucumber, red bell pepper, and carrots under cold running water. Pat the vegetables dry with a clean kitchen towel.

    Chop Romaine Lettuce

    Remove the tough stems from the romaine lettuce and chop the leaves into bite-sized pieces. Place in a large salad bowl.

    Halve Cherry Tomatoes

    Cut the cherry tomatoes in half and add them to the bowl with the romaine lettuce.

    Slice Cucumber

    Cut the cucumber in half lengthwise and then slice it into half-moon shapes. Add to the salad bowl.

    Dice Red Bell Pepper

    Remove the seeds and stem from the red bell pepper, then dice it into small pieces. Add to the salad bowl.

    Grate Carrots

    Peel the carrot and grate it using a box grater or a food processor. Add the grated carrots to the salad bowl.

Dressing Preparation

    Mix Dressing Ingredients

    In a small bowl, combine the olive oil, red wine vinegar, honey, Dijon mustard, salt, and black pepper. Whisk until well combined and emulsified.

Assemble Salad

    Pour the dressing over the chopped vegetables in the salad bowl. Toss gently until all vegetables are evenly coated with the dressing.
