    Boil the Eggs

    Place the eggs in a saucepan and cover them with cold water, ensuring there is an inch of water above the eggs. Bring to a rolling boil over medium-high heat.

    Cool the Eggs

    Once boiling, cover the saucepan with a lid, remove it from heat, and let the eggs sit for 12 minutes. After 12 minutes, transfer the eggs to a bowl of ice water to cool for about 5 minutes.

Filling Preparation

    Peel the Eggs

    Once the eggs are cool, gently tap each egg on a hard surface and peel off the shells. Rinse the peeled eggs under cold water to remove any shell fragments.

    Prepare the Filling

    Slice the peeled eggs in half lengthwise and carefully remove the yolks, placing them in a mixing bowl. Add mayonnaise, Dijon mustard, white vinegar, salt, and black pepper to the yolks. Mash with a fork until smooth and creamy.

    If desired, stir in chopped chives or parsley to the egg yolk mixture for added flavor and color.

Assembly
