Crust Preparation

    Make the Dough

    In a large mixing bowl, combine the flour, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, mixing until the dough comes together.

    Chill the Dough

    Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.

    Roll the Dough

    After chilling, roll out the dough on a floured surface to fit your pie pan. Transfer to the pie pan and trim the excess dough.

Filling Preparation

    Prepare the Filling

    In a large bowl, combine the fresh fruit, sugar, cornstarch, cinnamon, lemon juice, and vanilla extract. Mix until the fruit is well coated.

    Fill the Crust

    Pour the fruit filling into the prepared pie crust, spreading evenly.

Baking

    Bake the Pie

    Preheat the oven to 425°F (220°C). Bake the pie for 15 minutes, then reduce the temperature to 350°F (175°C) and continue baking for an additional 30-35 minutes, or until the crust is golden and the filling is bubbly.

    Cool the Pie

    Remove the pie from the oven and let it cool on a wire rack for at least 2 hours before slicing.

Serving

    Slice the pie into wedges and serve with a dollop of whipped cream and a sprig of fresh mint, if desired.
