Preparing the Pork Belly

Season the Pork Belly
Preheat your oven to 300°F (150°C). Pat the pork belly slices dry with a paper towel. Season both sides of the pork belly with salt and black pepper, ensuring they are evenly coated.

Bake the Pork Belly
Place the seasoned pork belly slices on a baking sheet lined with parchment paper. Bake in the preheated oven for about 2 to 2.5 hours, or until the pork is tender and the fat has rendered. Flip the slices halfway through the cooking time.
Making the Spicy Asian BBQ Sauce

Combine Sauce Ingredients
In a medium saucepan, combine soy sauce, honey, Sriracha, rice vinegar, minced garlic, grated ginger, and sesame oil. Stir well to combine.

Thicken the Sauce
In a small bowl, mix cornstarch with water until smooth. Add this mixture to the saucepan and cook over medium heat, stirring constantly until the sauce thickens, about 3-5 minutes.
Finishing the Dish

Crisp the Pork Belly
After baking, increase the oven temperature to 450°F (230°C). Return the pork belly to the oven and roast for an additional 15-20 minutes, or until the top is crispy and golden brown.

Remove the pork belly from the oven and let it rest for 5 minutes. Slice into pieces and serve drizzled with the spicy Asian BBQ sauce.
