Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Set over a pot of simmering water (double boiler) and stir until melted and smooth. Remove from heat and let cool slightly.

Whisk Eggs and Sugar
In a separate bowl, whisk together the granulated sugar and eggs until the mixture is pale and slightly thickened. This should take about 3-4 minutes.

Add Dry Ingredients
Sift in the all-purpose flour, add the vanilla extract, and a pinch of salt. Fold gently until no flour streaks remain. Be careful not to overmix.

Preheat Oven
Preheat your oven to 200°C (392°F).

Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

Bake
Place the ramekins in the preheated oven and bake for 10-12 minutes, or until the edges are set but the center is still soft.

Cool and Serve
Remove from the oven and let cool for 1-2 minutes. Carefully run a knife around the edges and invert onto plates. Serve immediately with a scoop of vanilla ice cream.
