Potato Chips

Method

Potato Chips Preparation

  1. 1

    Wash and Slice Potatoes

Wash the potatoes thoroughly to remove any dirt. Using a sharp knife or a mandoline slicer, slice the potatoes into thin rounds (about 1/8 inch thick).

  2. 2

    Soak and Dry

Place the potato slices in a bowl of cold water and let them soak for at least 30 minutes. This helps to remove excess starch and makes the chips crispier. After soaking, drain the water and pat the slices dry with a clean kitchen towel.

  3. 3

    Heat Oil

In a deep frying pan or a large pot, heat the vegetable oil over medium heat until it reaches 350°F (175°C).

  4. 4

    Fry the Potato Slices

Carefully add a handful of potato slices to the hot oil, making sure not to overcrowd the pan. Fry until golden brown, about 3-5 minutes, turning occasionally. Remove with a slotted spoon and place on paper towels to drain excess oil.

  5. 5

    Season

While the chips are still hot, sprinkle with salt and any optional seasonings of your choice. Toss gently to coat.

Tortilla Chips Preparation

  1. 6

    Cut Tortillas

Stack the corn tortillas and cut them into triangles (like pizza slices) or strips, depending on your preference.

  2. 7

    Heat Oil

In a large frying pan, heat the vegetable oil over medium heat until hot.

  3. 8

    Fry the Tortilla Chips

Add a few tortilla triangles to the hot oil, cooking in batches. Fry until they are golden brown and crisp, about 2-3 minutes per batch. Use a slotted spoon to remove and drain on paper towels.

  4. 9

    Season

While the tortilla chips are still warm, sprinkle with salt and toss to ensure they are evenly coated.
