Cooking the Filet Mignon

    Prepare the Steak

    Remove the center cut filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This ensures even cooking.

    Season the Steak

    Rub the steak with olive oil and season generously with salt and freshly ground black pepper on all sides. Sprinkle with fresh rosemary.

    Preheat the Pan

    Heat a cast-iron skillet or heavy pan over medium-high heat. Allow it to get hot for about 5 minutes.

    Sear the Steak

    Add the seasoned filet mignon to the hot pan. Sear for about 4-5 minutes on one side without moving it, until a nice crust forms.

    Flip and Add Butter

    Flip the steak over using tongs. Add butter to the pan and baste the filet with the melted butter for another 4-5 minutes, or until it reaches your desired doneness (125°F for medium-rare).
