Cooking the Filet

    Prepare the Steak

    Remove the filet mignon from the refrigerator and let it sit at room temperature for about 30 minutes before cooking. This allows for even cooking.

    Season the Steak

    Pat the filet mignon dry with paper towels. Season both sides generously with salt and black pepper.

    Heat the Pan

    In a heavy skillet (cast iron preferred), heat the olive oil over medium-high heat until it shimmers.

    Sear the Steak

    Place the seasoned filet mignon in the hot skillet and sear for about 4-5 minutes without moving it. This creates a nice crust.

    Flip the Steak

    Using tongs, gently flip the steak and add the crushed garlic cloves and fresh rosemary to the pan. Cook for another 4-5 minutes for medium-rare, or longer if you prefer it more well done.
