    Prepare the Beef

    Remove the beef from the refrigerator and let it come to room temperature for about 30 minutes. Pat it dry with paper towels.

    Season the Beef

    In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, and dried thyme. Rub this spice mixture all over the beef, ensuring it is evenly coated.

Cooking

    Sear the Beef

    In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned beef. Sear each side for about 3-4 minutes until a brown crust forms.

    Prepare Vegetables (optional)

    While the beef is searing, peel and chop the carrots, potatoes, and onion as desired.

    Cook the Beef

    Transfer the seared beef to a slow cooker or a Dutch oven. If using, add the chopped vegetables around the beef. Cook on low for 6-8 hours or on high for 3-4 hours until the meat is tender.

Serving

    Slice and Serve

    Once cooked, remove the beef from the cooker and let it rest for 10 minutes before slicing. Serve warm with the cooked vegetables.
