Tart Crust Preparation

    Make the Dough

    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Add Ice Water

    Gradually add ice water, one tablespoon at a time, mixing gently until the dough starts to come together.

    Chill the Dough

    Form the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

Apple Filling Preparation

    Prepare Apples

    Peel, core, and slice the apples into thin wedges. Place them in a large bowl.

    Mix Filling Ingredients

    Add granulated sugar, ground cinnamon, and lemon juice to the apples, tossing to coat evenly.

Assembling and Baking

    Preheat Oven

    Preheat your oven to 375°F (190°C).

    Roll Out Dough

    On a floured surface, roll out the chilled dough to fit a 9-inch tart pan. Place the dough in the pan and trim the excess.

    Arrange the apple mixture evenly over the crust. Dot with small pieces of butter.

    Bake the Tart

    Bake in the preheated oven for 40-45 minutes, or until the apples are tender and the crust is golden.

Custard Sauce Preparation

    Heat Milk and Cream

    In a saucepan, combine milk and heavy cream over medium heat until just simmering.

    Whisk Egg Yolks and Sugar

    In a separate bowl, whisk together the egg yolks and granulated sugar until pale.

    Slowly pour the hot milk mixture into the egg yolk mixture, whisking constantly to temper the yolks.

    Return the mixture to the saucepan and cook over low heat, stirring constantly, until thickened. Remove from heat and stir in vanilla extract.

Serving
